Love the taste and colour of this recipe. It is currently one of my daughter, Eliana's favourite meals.
1Place the sweet potato and pepper in a saucepan. Add just enough water cover. Bring to a boil and simmer on low heat for 15 minutes.
2Add the pear and nutmeg and simmer for a further 5 minutes.
3Puree the sweet potato, pepper and pear in a food processor or blender adding a little of the cooking liquid to achieve the desired consistency.
